1 lb diced chicken breast
1 Tbl. Cornstarch
1 1/3 c chicken broth
1/2 cup sliced carrots
1/2 cup coconut milk
2 tsp cumin
1 tsp curry powder
1/2 tsp cinnamon
1/4 tsp red pepper
salt to taste
Toss chicken and cornstarch together. Brown chicken in skillet. Add remaining ingredients and simmer until carrots are tender. Serve over rice.
